Building the foundation of the brand.

Whenever a new store opens, I visit the site to provide technical guidance and training to our production team members. I am also involved in product development and planning new products across all our brands, translating the founder’s vision and the brand’s worldview into tangible products. To ensure consistent quality at every location, I continuously work on selecting the right ingredients, sourcing new materials, and improving standardized production processes. From both the frontline and development perspectives, my role is to build and strengthen the foundation of the brand.

Passing on both the skill and the mindset behind it.

At peace put, many of our team members join us with no prior experience. That’s why I believe it’s not just about teaching technique, but about how we teach it. Rather than simply demonstrating a process, I explain the reasoning behind each step — why it matters — and then have them try it themselves, thinking through improvements together. By carefully repeating this cycle, I’ve seen steady and meaningful growth take place. In product development, I take time to understand the core ideas behind proposals from each store, while incorporating seasonality and peak ingredients. I always strive for a balance between harmony and a sense of surprise.

Protect, Break, Transcend (Shu-Ha-Ri)

To me, the spirit of craftsmanship is embodied in the spirit of "Protect, Break, Transcend (Shu-Ha-Ri)". It is important to value one’s own standards and convictions. But if we cling to them too tightly, growth comes to a halt. First, we must protect the fundamentals — absorbing the wisdom and techniques of those who came before us. Then, we begin to break from tradition, embracing new ideas and methods with flexibility. In time, we transcend the form altogether, refining it into a style that is uniquely our own. I believe that maintaining this mindset is essential for any craftsman who wishes to continue growing over the long term.

Evolving, while staying true to our origins.

As the company continues to grow, I want to honor where we began — valuing both the importance of change and the importance of what must never change. As we scale, efficiency and systems naturally become more essential. But we must never lose the passion and care that define our craftsmanship. On a personal level, I also hope to one day take on the challenge of creating a brand of my own. Drawing on the experience I’ve gained at peace put, I aspire to grow into someone who can create new and meaningful value.
