On November 1, 2025, two stores — “I’m donut? Gluten Free Shibuya Aoyama-dori” and “I’m donut? Gluten Free & Vegan Shibuya Aoyama-dori” — will reopen simultaneously.
peace put Co., Ltd. (Head Office: Fukuoka City / CEO: Ryota Hirako), the company behind the Fukuoka-born bakery AMAM DACOTAN, will renovate the former I’m donut? Shibuya store and relaunch it as I’m donut? Gluten Free, a dedicated gluten-free brand.
In addition, the I’m donut? Gluten Free store that opened in June 2025 will evolve into a new brand, I’m donut? Gluten Free & Vegan, offering donuts made entirely with plant-based ingredients.

Two New Challenges This renewal represents two new initiatives.
I’m donut? Gluten Free
This concept offers donuts made without wheat, using a gluten-free dough based on Japanese rice flour.
The goal is to create a new option for those who avoid wheat while ensuring the same sense of deliciousness and excitement.
At the heart of the idea is a simple wish:
to make the joy of discovering a box of donuts — the kind that sparks excitement in childhood — something everyone can experience.
I’m donut? Gluten Free & Vegan
The second concept introduces vegan donuts made entirely from plant-based ingredients — including the dough, creams, and toppings.
Even custard, traditionally made with eggs and dairy, has been reimagined with a newly developed plant-based custard recipe. The goal is to create a satisfying donut experience while highlighting the natural flavor of each ingredient.
This initiative was born from owner-chef Ryota Hirako’s belief that people from different cultures and lifestyles should be able to gather around the same table and simply say, “This is delicious.”
Together, these two brands reflect a renewed commitment to creating spaces where more people can enjoy great food regardless of dietary preferences.
From Shibuya, a district where many of our brands are located, we aim to create welcoming stores where anyone can stop by and feel naturally included.

The renewed I’m donut? Gluten Free store will offer donuts made with a rich gluten-free dough containing eggs and butter.
The dough uses Japanese rice flour combined with ingredients such as pumpkin and banana, carefully balanced for moisture and sweetness. By frying quickly at high heat, the donuts achieve a soft, light, and delicately melting texture.
The shop will offer around 30 varieties, including savory options.
Inside the antique-inspired space, colorful display tables appear as if giant toy blocks have fallen into the room, adding a playful contrast to the classic atmosphere. Square donuts inspired by block shapes create a whimsical, game-like world filled with curiosity and fun.

Even traditionally dairy-based elements such as custard have been redeveloped using plant-based ingredients, resulting in a house-made vegan custard designed to highlight natural sweetness and aroma.
The aim is to create a vegan donut that delivers the same level of satisfaction as a traditional donut.
