Opening Hiracon Chez in Hirao, Fukuoka — The Voyage Begins

After serving as head chef at an Italian restaurant, Hirako set out with a simple wish: to offer pasta that was casual, affordable, and satisfying. He built the space himself, creating a warm, handmade atmosphere.

AMAM DACOTAN — A small bakery, tucked within a city of stone

What began as baking bread in-house for Hiracon Chez grew into a full bakery venture. In designing the space, equal care was given to atmosphere—creating a setting that enhances the flavor of the bread and invites guests to step into our world.

AMAM DACOTAN Opens in Omotesando — Our First Step into Tokyo

From the beginning, AMAM DACOTAN set a guiding principle: no more than three locations in Japan. Omotesando became the second—marking our first step into Tokyo. Expanding beyond our home region signaled a new chapter of growth for peace put.

From Fried Brioche to I’m donut? A New Chapter Begins

Born from a simple idea—to fry the brioche dough used at AMAM DACOTAN—the “nama donut” came to life. Lightly crisp on the outside, soft and airy within, with a clean, delicate bite. Its unique texture redefined expectations and quickly became a breakout favorite.

dacō Opens — An Alternate Brand stemming from AMAM DACOTAN

A bakery café where both bread and drinks take center stage. Offering around 40 varieties in just-right portions—perfect for one, or to share for two—dacō was created to bring the joy of choosing and the comfort of finishing every bite, making bread feel even more a part of everyday life.

I’m donut? Opens Its First Global Flagship in New York’s Times Square

As Japan’s first fresh donut specialty brand, we opened our first overseas global flagship in New York’s Times Square. Designed with a subtle sense of Japanese “wa,” the shop drew significant attention—welcoming lines of over 200 people on its opening day.

2012

Opened Pasta Shokudo Hiracon Chez in Hirao, Fukuoka.

The restaurant, built through DIY, quickly gained popularity for its pasta and colorful vegetable-focused appetizer plates, marking the first step toward becoming a destination known for long lines.

2014

Pasta Shokudo Hiracon Chez relocated from Hirao to Kego following expansion.

Inspired by a countryside French diner, the new space offered a warm, lively atmosphere.

※Closed in June 2022 due to relocation requirements.

2015

Opened Café Hiracon Chez Classic in Kego, Fukuoka.

The two-story café also housed the dry flower shop Côté Jardin. The restaurant’s interior—featuring fresh flowers suspended across the ceiling—became widely known for its unique “fusion of food and flowers.” Bread, initially sourced externally, began to be baked in-house, which later led to the creation of AMAM DACOTAN.

2018

Opened the bakery AMAM DACOTAN Ropponmatsu in Fukuoka.

Conceived as “a small bakery in a stone town,” the shop grew from the in-house bread-making that began at Hiracon Chez. Seeing customers’ reactions firsthand deepened the team’s passion for bread, leading to continual refinement. The interior was carefully designed to enhance the experience of eating bread, creating a space where visitors could enjoy not only the products but also the world surrounding them.

2021

Opened AMAM DACOTAN Omotesando in Tokyo, marking the brand’s first expansion into the capital.

In April of the same year, the bakery café DACOMECCA opened in Hakata, Fukuoka, as a sister shop of AMAM DACOTAN.

2022

Opened I’m donut? in Nakameguro, Tokyo—a specialty shop dedicated to fresh, melt-in-the-mouth donuts.

The concept was born from an experiment of frying the brioche dough originally used for bread at AMAM DACOTAN, resulting in the now-signature “nama donut.”

2023

Opened dacō in Sakurashinmachi, Tokyo.

Designed as an urban bakery, dacō features smaller breads so guests can enjoy multiple varieties at once—embracing the joy of choosing and the satisfaction of finishing every bite.

2024

Opened dacō? in Komazawa, Tokyo, a new concept blending the worlds of I’m donut? and dacō.

2024

Opened AMAM DACOTAN Kyoto in Karasuma, marking the brand’s first location in the Kansai region.

2025

Opened I’m donut?Times Square in New York, the brand’s first overseas location.

2025

Expanded internationally with additional I’m donut?shops in Taipei (July) and Seoul (September). As of 2026, three international locations are in operation.

2025

Launched three new brands in Tokyo.

I’m donut? Gluten Free – a gluten-free donut concept Neo Nice Burger – a craft burger brand AMAM DACOTAN cafe&bake – a baked sweets concept derived from AMAM DACOTAN.
